Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Main pizza prep table AND line cooler prep counter have cheese residue, grease, potato chips and cloth soiled with pizza sauce. Staff on site said main prep cook has left for the day, another prep cook to come later before 3:30/4PM to make food for dinner rush.
Correction: Clean off food debris and sanitize all food prep tables before and after use.

Operator has posted Food Safe Certificate, paid for Permit and posted in public view the Permit.
Operator has had 1 more staff trained in Food Safe and will send temporary certificate. Thank you.
Prep tables still have food residue but secondary prep table has improved.
Owner informed staff to clean before/after food prep, thank you.
Recommend tongs be stored in a tray or other clean container when not in use and have this cleaned and sanitized at least after lunch/afterschool/before supper rush. Currently the tongs are placed on the table with food residue and continuously being used.
Back storage area: flour and bags of food have been raised by plastic container. Thank you.
Back storage area can use some more cleaning around food storage areas and to prevent pests.
Hand washing: operators were observed to hand wash before food preparation, thank you.
For service and take out, continue to use tongs and single use paper plates.
Continue to complete hand hygiene before handling food.
