A routine inspection was conducted:
- Dairy walk-in-cooler 2C; walk-in-cooler 3C; raw egg cooler 4C; sandwich assembly cooler 4C; bottled drink cooler 10C; dairy dispensing coolers 4C or colder; walk-in-freezers -20C; hot holding units above 60C; thermometers present; and temps recorded daily.
- High temperature dishwasher had rinse cycle temp of 76.6C at the plate's surface, as per max/min thermometer.
- Quats sanitizer in spray bottle and cloth buckets had strength of 200ppm. Time written on buckets to remind staff when to change the solution.
- Foods stored in food grade containers; covered; labeled; date coded; foods stored in groups with proteins stored separately or below RTE foods; and foods stored 6" off the floor on shelves, racks, or platforms.
- No expired foods in use or food sale. FIFO rules being followed.
- General sanitation level has improved, good job.
- The floors along the base of all walls; under and behind equipment, shelves and tables are being moved and cleaned regularly. Good job.
- Cupboards and counter tops under machines have minimal food debris (sugar, coffee beans, packaging, etc.). Detailed cleaning is being done at a good frequency. Good job.
- Exhaust canopy is clean and professionally cleaned in March 2025. Next professional cleaning is due in March 2026.
- No signs of droppings or flies in the premises. Monthly pest contract (Phantom) monitors for pests, and tin traps & snap traps placed in the premises. Reviewed reports and staff are following all recommendations made by the pest company.
- Blue fly light present in back area to catch flies.
- FoodSafe certified staff present, or those with an equivalent recognized course.
- Staff wear gloves; hair nets and clean uniforms.
- Handwashing sinks stocked with liquid soap, paper towels, and running hot and cold.
- All items have been removed from the floor and stored on racks and shelves. This makes it easier to clean the floors and decreases areas for pests to hide.
- All the mice droppings have been cleaned up in the chemical storage area, and the lowest shelf has been removed to allow for better cleaning.
- Valid health permit and deal posted.

NOTES
Ensure the floor behind, around and beneath the donut baking ovens is cleaned daily, to remove debris.
Keep up with cleaning and the hard-to-reach areas. Invest in a small, long handled vacuum or scrub brush to clean under the equipment on the counter tops.
