- Routine inspection.
- All hand washing stations were properly equipped with hot and cold running water, liquid soap, and paper towels.
- Quat-based sanitizer solution available at 200 ppm in sanitizing pails and from dispenser.
- High-temperature dishwasher reached 76C at the dish surface during final rinse. Good, minimum of 71C at the dish surface required.
- All coolers measured 4C or less.
- Freezer (walk-in) measured -22C.
- Accurate thermometers available. Temperature logs available and up to date.
- Food preparation sinks maintained in sanitary conditions.
- Food stored in coolers/freezers in an organized manner, properly covered, with good separation between raw and ready-to-eat food items.
- Proper thawing practices (in walk-in cooler) observed at time of inspection.
- Dry storage area satisfactory. All food stored properly covered/protected from contamination.
- Equipment and utensils maintained in sanitary conditions.
- General sanitation excellent.
- No signs of pest activity noted at time of inspection.
- All kitchen staff have FoodSafe level 1 or equivalent.
- Five serveries onsite; each equipped with a cooler and hand sink. Coolers were at 4C or less. Hand sinks were properly supplied. Ice machines (2) were maintained in sanitary conditions.
