Corrective action: Dispose of the moldy chorizo.

Observation (CORRECTED DURING INSPECTION): Cold potentially hazardous foods (eg. dairy and meat products) stored >4C and has been in the sandwich prep cooler since July 15.
Corrective action: Dispose of all the potentially hazardous food in the sandwich cooler.
Rationale: Cold potentially hazardous food when stored at 4C - 60C can support the growth of disease causing organisms and the production of toxins, which can lead to foodborne illness.

Observation (CORRECTED DURING INSPECTION): Veggie dicer observed to have dried food debris on the surface while stored in a clean container on the shelf.
Corrective action: Ensure that the veggie dicer is thoroughly cleaned and sanitized.
Rationale: Unsanitary equipment can support the growth of bacteria and toxin production. Food can be contaminated by the veggie dicer, which can lead to foodborne illness.

Observation (CORRECTED DURING INSPECTION): Food handler claimed that juicer is cleaned and sanitized at the end of the day.
Corrective action: Educated food handler that juicer needs to be cleaned and sanitized every four hours.
Rationale: Bacteria can grow and toxins can be produced on the internal surface of the juicer at room temperature. Juice can become contaminated by the juicer, which may lead to customers getting sick.

Corrective action: Remove the bucket in the handsink.
Rationale: Ensure no supplies are stored in the handsink all times to increase accessibility and facilitate frequent handwashing.

Observation (CORRECTED DURING INSPECTION): Handles of the ice cream scoops are in direct contact with the ice cream in the ice cream chest freezer.
Corrective action: Ensure that the handles of the scoops are not touching not touching the ice cream.
Rationale: Bacteria from the food handlers hands can be transferred onto the scoop handles, which can be transferred onto the food. This can lead to customers getting sick.

Observation: Sandwich prep cooler measured to have an ambient temperature of 9 - 10C.
Corrective action: Contact a technician to fix the cooler. Do not use this cooler to store potentially hazardous food until the cooler is confirmed to be working by the health inspector.
Rationale: Cold potentially hazardous foods cannot be maintained <4C if the cooler cannot be held at <4C.

General observations noted during the inspection.
1. Temperatures
-The coolers (under the counter cooler, cooler with the glass, sliding door and upright cooler) maintained at satisfactory temperatures except see above (code 308)
-Walk-in freezer maintained at satisfactory temperature.
-Temperature logs in use and updated daily.
-Thermometers available in refrigeration units.

2. Sanitation
-3-compartment sink with drain plugs set up for manual dishwashing.
-Handsink equipped with liquid handsoap, hot/cold running water and paper towel.
-Cutting board cleaned and sanitized after every use.
-Ice cream scoops stored in dipper wells with cold running water.
-Ice machine in sanitary condition with scoop stored on top.
-QUATs dispenser line and spray bottle measured at 200ppm.

3. Storage
-No foods stored near chemicals.

4. Pest control
-No pest activity detected.

5. Administrative
-At least one food handler has current and valid FOODSAFE level 1 training (expire: Oct 1, 2023).
