Observation (CORRECTED DURING INSPECTION): Pizza toppings and cheese inside of the undercounter prep cooler were at approximately 6-7C at time of inspection.
Corrective Action(s): Pizza toppings and cheese were transferred to the walk-in cooler. Do not use the undercounter prep cooler until it can consistently maintain 4C or less.

302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): QUATS spray bottle at front-of-house was in undiluted form (>>> 200 ppm QUATS).
Corrective Action(s): Spray bottle was emptied and sanitizer from the dispenser was re-added to the spray bottle. This was measured at 200 ppm. Spray bottle was subsequently labelled with 'sanitizer'. DO NOT add undiluted sanitizer to the spray bottle - it must be used at the proper concentration (e.g. 200 ppm). Using excessively high / undiluted concentrations may result in chemical contamination of your food.

Observation: Undercounter prep cooler was at an ambient temperature of approximately 7C at time of inspection.
Corrective Action(s): Adjust the prep cooler so that it can maintain an ambient temperature of 4C or less. Do not use the prep cooler until it has been repaired and/or adjusted to meet temperature requirements.

Comments

Routine inspection conducted. The following observations were made:

1. Temperatures
- Prep cooler - cooling wells at 4C
- Undercounter cooler at 7C* (see violation code above)
- Beverage cooler at 2C
- Walk-in cooler at 2C
- Coolers equipped with accurate thermometers
- Temperature logs are up-to-date

NOTE: Alfredo sauce was observed out at room temperature. Manager states that the store holds it at room temperature for 4 hours and then discards it. However, no time tracking label was added onto the alfredo sauce. You must ensure that any items that are meant to be refrigerated are kept inside the cooler unless it is time-controlled through an approved food safety plan.

2. Hygiene and Sanitizing
- Hand wash stations in restroom and in food preparation area stocked with hot/cold running water, liquid soap, and single-use paper towels
- Sanitizer dispenser releases 200 ppm QUATS at time of inspection
- Flow of dirty dishes to clean dishes is good - all dirty dishes stored left of the 3-compartment sink
- Cleaned and sanitized equipment such as pizza cutters stored at the back in good sanitary condition
- Pizza cutters, according to the manager, are changed once every 2 hours

3. Storage
- All food products are neatly stored at least 15 cm off the floor - good
- Food products and ingredients are covered / in original packaging when not in use
- Chemicals are stored separately in back storage area

4. Pests
- No recent, visible signs of pest activity at time of inspection
- Mechanical traps T1 through T5 were checked - no rodents were detected inside. Traps were recently reset with adhesive
- Professional pest control company conducts routine audits. Last inspection by pest control company was conducted on May 16, 2019. No rodent activity observed during the inspection

5. Administrative
- Permit posted and up-to-date
- Manager on duty has FoodSafe 1 (Expiry: January 21, 2022)
