Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Hot temperature dishwasher achieves 65.7C at the dishlevel. Multiple attempts to increase the heat and retest the hot water temperature dish washer have proven unsuccessful. This needs to be corrected asap as dishes cannot be sanitized properly.
Correction: Fix the hot water dishwasher to achieve 71C at plate level. Date to be corrected: immediately

-Pest control company was on site and treated for cockroaches. Continue to follow their recommendations for eradication of cockroaches
-Grout lines in floor tiles need to be filled to eliminate pooling of water and food debris. Flooring should be maintained in sanitary condition and be smooth to facilitate cleaning procedures
-Gaps in the wall behind the dishwasher need to be sealed to eliminate pest harborage
-High temperature dishwasher is achieving 71C at the plate level. Ensure this is checked twice a day with an accurate waterproof thermometer to ensure continuous compliance
-Food containers still need to be covered when in storage. 4 containers were found uncovered
