Cold potentially hazardous food stored/displayed above 4 °C. [s. 14(2)]
Observation: Potentially hazardous foods (meat, cheese, milk, etc.) in coolers (two door clooer and one door cooler) measured >7C internally. The coolers themselves measured >10C. It is uncertain how long the foods have been temperature abused.
Correction: Discard all potentially hazardous foods.

Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation: Only one sanitizer bottle present at the store front. There was no sanitizer in the kitchen.
Correction: Store all cloths in a bucket of 100ppm chlorine sanitizer in the kitchen. Recommend obtaining a chlorine test strip.

Equipment/facilities/hot & cold water for sanitary maintenance not adequate [s. 17(3); s. 4(1)(f)]
Observation: Hot water had been turned off at the handwashing sink due to leaky facuet.
Correction: Hanswashing sink must always be readily equipped with hot & cold running water. Do not turn off the hot water valve. Repair the leaky faucet.
Comments

The following corrective actions were observed:
- Coolers maintain 4C (two door cooler 4C, one door cooler 0.8C). Ensure to monitor temperature daily.
- Sanitizer bottles are properly labelled and a bucket was provided in the kitchen to store cloths. Ensure to keep the cloths in the sanitizer bucket when not in use.
- The hot water valve at the handsink was not turned off.

- Dishwasher reached >71C when it ran for longer duration manually. However, on automatic cycle, the temperature reached 68C at plate's surface. The current automatic cycle setting requires adjustment so that it runs for longer and reaches 71C on plate's surface.
- The operator's current FOODSAFE certificate has expired. Please obtain a valid certificate within 1 month.
