Coolers (in back storage room, milk cooler, etc.) - are at 4C/ 40F or colder.
Freezers - ok.
No hot holding.
No raw eggs.
Pasteurized milk used. Provided information on gelato food safety requirements.
Operator on site has Food Safe Level 1 training. ***Check expiry date and take Refresher course before expiry. - See www.foodsafe.ca Food Safe Level 1 Refresher course.
Hand washing sinks have hot /cold water, liquid soap, and paper towels. Disposable non-latex gloves also available.
Wiping cloths are stored in a sanitizing solution 50ppm +. Chlorine test strips available. Note: 100ppm chlorine required so change frequently. Use 2mL to 5mL plain domestic bleach in 1 liter water to make 100-200ppm chlorine solution.
Dipper wells in use.
Reviewed gelato equipment cleaning and sanitizing. Always follow machine manufacturer's directions and directions on the label of the sanitizer container - 100ppm chlorine used to sanitize.
Mechanical commercial dishwasher has a final hot water sanitizing rinse (to be 180F at gauge and today measured 160F inside of the machine) - good.
Cleaning and organization good.
Pest control plan in place. Pay attention to back storage room. All food in pest proof containers.
