Observation (CORRECTED DURING INSPECTION): Dishwasher has a final sanitizing rinse of about 25 ppm. Operator has test strips.
Corrective Action(s): Immediately ensure that the concentraion of chlorine for the final sanitizing rinse for the commercial dishwasher is always 50ppm.
Corrected during inspection: After priming machine and several runs, the final rinse was 50ppm. Monitor this every day.
