Observation (CORRECTED DURING INSPECTION): One container of cooked beef stored on the bottom shelf of produce cooler measured 9C as per probe thermometer.
Corrective Action(s): Cooked beef was relocated to 2-door reach in cooler immediately.

Observation (CORRECTED DURING INSPECTION): Back of house sanitizer solution was too strong, measured >200ppm chlorine as per test strips.
Corrective Action(s): Solution was diluted at the time of inspection to 200ppm chlorine. Test strips are available on site - ensure the solution is tested each time it is prepared.

100-200ppm chlorine solution is 2mL of bleach for every 1L of water.

Observation: Several stored food items are not covered or protected from contamination:
1) Prep cooler: 5 buckets of raw meats/shrimp not covered
2) Reach in cooler: 1 bucket of baby corn and 1 container of broccoli not covered
3) Dry storage: 1 opened bag of sugar and 1 opened bag of rice
4) 3 tupperwares of cooked egg noodles: containers and lids were broken, pieces are missing. Potential hazard for physical contamination of food.
Corrective Action(s): All stored food items not for immediate use must be covered and protected from contamination. Use appropriate lid or plastic wrap. Lids and storage containers must be in good and safe condition.

> Dry storage rack --> rice and dust on shelving
Corrective Action(s): Clean and sanitize above mentioned areas as per your sanitation plan. Please ensure hard to reach areas are not forgotten.

Vent hood baffles may be removed and cleaned and sanitized separately in addition to professional cleaning. Recommend to remove for cleaning every week to minimize the amount of grease accumulation.

**Air temperature inside produce cooler was variable.
> Food products stored on the top shelf directly below the air vent ranged from 0C to 3C, however products stored on the shelves below ranged from 6C to 9C.
> Please ensure this cooler is not too full to allow proper air flow throughout the entire cooler. Storing too many items may block air flow from above, causing items stored on the bottom shelves to rise above 4C. Reorganize this cooler.

General:
> Back and front handsinks supplied with hot+cold water, liquid soap and paper towels. No obstructions to handsinks.
> Low temperature dishwasher had 100ppm chlorine residual for sanitizing.
> 2 compartment sink available for manual warewashing.
> Front of house sanitizer solution was 200ppm chlorine.
> No signs of pests at time of inspection. Back screen door is in place.
> Health permit posted.
