Observation: Under counter cooler was at 6C to 8C. Back of cooler is icing up - ice was cleaned this morning.
Corrective Action(s): Service cooler unit and ensure it can maintain foods at 4C or a consistent basis. Cream and cheese were moved to a cooler unit capable of maintaining 4C.

Comments

-Walk-in cooler was at 4C.
-Walk-in freezer was at -16C.
-Both sandwich coolers were at 4C or less.
-Front display cooler (dairy) was at 4C.
-Hot holding was greater than 60C. Soup and meatballs are reheated in the microwave to greater than 74C prior to placing in hot holding unit.
-Temperatures checked and recorded twice daily.
-Cleaning and sanitizing carried out in 3-compartment sink. Quats sanitizer dispenser was tested at 200ppm.
-Quats sanitizer spray bottle labelled and tested at 200ppm.
-Handwash station accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels. Staff demonstrated good hand hygiene and single use glove usage practices.
-Vegetable cutting equipment clean and well maintained.
-General food storage practices good at the time of inspection. Foods properly covered and stored off the floor.
-Frozen foods thawing in the walk-in cooler.
-General sanitation good at the time of inspection.
-No signs of pests noted at the time of inspection.
-Washroom clean and well maintained.
-FoodSafe Level 1 valid until June 20, 2024.
