Comments

- Hand sink properly supplied with hot and cold running water, liquid soap, and paper towels
- Quat sanitizer pails were being changed at onset of inspection. Newly filled pails detected to have 200 ppm Quats. Staff stated sanitizer solution in pails is changed every 30 minutes.
- High-temperature dishwasher reached 74C at the dish surface during rinse cylce. Good (minimum of 71C at the dish surface is required).
- Walk-in cooler and all prep coolers were measured at 4C or colder.
- Upright freezer measured at -15C.
- Hot-held rice measured at above 60C. Soup was being heated at time of inspection. *Ensure soup reaches cooking/reheating temperature of 100C (boiling) before being hot-held att 60C or hotter.
- Food storage practices satisfactory. All food stored off the floor and properly covered.
- Ice machine noted to be in sanitary condition. Scoop properly stored in designated holder.
- In-use utensils were stored in ice.
- General sanitation satisfactory.
- No signs of pest activity noted at time of inspection.
- FoodSafe certified staff onsite. Reminder for operator and staff with any expired FoodSafe certificates to retake the course ASAP.
