Sanitizer *quats* measured 200 ppm.
Prep line coolers was at 2-4.
Hot holding was for soups, gravies was above 60 deg C.
Line freezer was at -18 deg C.
Walk-in cooler was at or below 4 deg C.
Walk-in freezer was at -18 deg C.
Beer walk-in cooler was at 2-3 deg C.
Ice machine was clean and sanitize. Ensure to store ice scoop in sanitary manner.
Dishwasher had chlorine residual of 100 ppm (plate surface).
Bar area:
hand sink - liquid soap and paper towels available.
Glass ware washer had >12.5 ppm iodine
Cooler was at 4 deg C.
Washrooms were in sanitary condition.
