General Comments
No food handling/preparation occurs on premise. Foods include prepackaged chips, pepperoni sticks, bread delivered daily from Cobs
Peroxyacetic acid sanitizer used for brewery side. Discussed cleaning procedures for pre-pasteurization stages.
Quats sanitizer used for bar side. Concentration at 200 ppm. Please obtain QUATS (QAC) test strips to check the concentration daily.
No evidence of pest activity. Pest control on contract. Traps observed. Staff have not observed an issue or noted droppings. Discussed cleaning of droppings: Spray 1:10 bleach solution on droppings, wipe up with paper towel. Do not sweep or vacuum as this can cause aerosolization of pathogens that live inside rodent fecal matter
Coolers operating at </=4 C
Grain bags are sealed, 6" off the ground
General sanitation is good
Glass washer iodine concentration reached >/= 12.5 ppm at the glass level. Test strips available on-site.
All handsinks equipped with hot and cold running water, liquid soap and paper towel
