Hand wash stations equipped with liquid soap and paper towels.
Chlorine sanitizer for wiping cloths measured 100 ppm.
Quats sanitizer in spray bottles measured 200 ppm.
Hydrogen peroxide measured 3500 pm (test strip available).
Dishwasher chlorine residual at plate surface was at 100 ppm.
Walk-in freezer was at -20 deg C.
Walk-in cooler was below 4 deg C.
Prep line coolers registered at or below 4 deg C.
Line freezers were at -10 to -15 deg C (fries and nuggets).
Hot holding for nuggets, eggs, onions, meat patties was at or above 60 deg C.
Temperature log was available and well maintained.
No signs of pests noted at time of visit. Pest control monitoring in place and records available.
Note: Premises very busy at time inspection - Training was taking place and head office staff on-site.
Staff hygiene - clean uniforms and hair restraint worn.
Staff washroom and dining room washrooms were in sanitary condition.
General sanitation of premises was in satisfactory.
