NOTE: the building has Orkin Pest Control inspect twice monthly however report summaries are not provided to the operator -ensure you are getting a copy of the work reports so you are aware of any pest activity in the business

Temperature Controls:
-Walk-in cooler 4 deg C
-left side preparation cooler on cooking line 3 deg C
-right side preparation cooler on cooking line 2 deg C
-undercounter cooler at waitress area 4 deg C
-1-door display pop cooler 3 deg C

-steamed rice in the back 63 deg C
-steamed rice in the front next to prep cooler 66 deg C

Chemical Controls:
-Low temperature washer final chlorine residual >50ppm as per test strips
-Bleach sanitizer buckets >100ppm as per test strips
Reused wiping towels for food contact surfaces maintained in sanitizer buckets in the kitchen when not actively used
