Observation: Rodent droppings observed in:
1. Front of store, behind rice storage
2. In office area, along baseboards
3. In 'washroom'/dry storage area nearest hot water tank.


Corrective Action(s): Inform pest control company to have areas looked into immediately. Follow pest control technician on proper cleaning/sanitizing of area and follow recommendations/instructions on minimizing risk.

Provide inspector a copy of the pest control inspection report.

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Facility observed to be heavily cluttered in back storage area. Boxes of food products are stored in both back washrooms (not in use).
2. Fan covers in walk-in cooler observed to have heavy dust cover. This area needs to be cleaned regularly.
3. Hooks and pulleys observed to be heavily rusted in walk-in cooler (meat). The rusty equipment is found hanging over food, but not in direct contact.
Corrective Action(s): 1. Organize back area so it is easily cleanable. Toilets should be covered.
2. Fan covers need to be cleaned regularly
3. Store rusty equipment away from food products. Remove rust and seal with either paint or mineral oil to prevent rusting.

Observation: *Repeat* Cutting boards observed to be heavily scored and discoloured. Boards with cuts too deep cannot be easily cleaned ad sanitized. Bacteria will grow within the deep scoring, possibly contaminating meat that is cut on it.
Corrective Action(s): Repair, resurface, or replace cutting boards that are heavily damaged. If necessary, obtain smaller cutting boards for staff to cut on.

Sanitation:
Handwash station equipped with hot/cold running water, liquid soap and paper towels
Cleaning and sanitizing carried out in the 2-compartment sink. Bleach and sink plugs available.
Clean and sanitize prior to use for equipment.
Bleach sanitizer spray bottle labelled and tested at 200ppm.
Meat saw and grinder sanitized every 4 hours and disassembled for cleaning and sanitizing at the end of the night.

Storage:
All food items were stored at least 6" off the floor.
All products were either in original packaging or covered inside coolers.
Chemicals and cleaners were stored separate from food preparation areas.

General:
Pest control company has been contracted for monthly visits. Provide district inspector with a copy of latest report.
