Observation (CORRECTED DURING INSPECTION): 1 container of margarine was found to have mould growing in it and 2 containers of sour cream were found with a best before of 2015.
Corrective Action(s): Ensure stock is properly rotated and items which are no longer used are discarded from the fridge. Items were discarded at the time of inspection. Operator is to go through the cooler units and discard items which are no longer used.

301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 2 butcher knives were stored in the space between prep tables. This is a continuing deficiency.
Corrective Action(s): Ensure knives are stored in a sanitary manner at all times. The area between prep tables cannot be properly cleaned and sanitized on a regular basis.

Observation (CORRECTED DURING INSPECTION): 1) Raw meat was stored on the shelf above ready-to-eat foods.
2) 2 bags of onions and 1 bag of bean sprouts was stored on the floor.
3) Food was found stacked directly on top of one another.
Corrective Action(s): 1) Raw meats must be stored below and separately from ready-to-eat foods to prevent potential contamination of foods. Shelving units were reorganized at the time of inspection.
2) Ensure food are properly stored off the floor and protected from contamination at all times. Items were moved off the floor at the time of inspection.
3) Ensure foods are stored in a sanitary manner. Do not stack foods on top of one another with out a physical separation between the two items.

Observation (CORRECTED DURING INSPECTION): Squid was being thawed in standing water at the time of inspection.
Corrective Action(s): Frozen foods must be thawed under cold running water or in a cooler at 4C or less at all times. Squid was placed under cold running water at the time of inspection.

Observation: Food debris was found under equipment, on wall, and on equipment.
Corrective Action(s): Ensure facility is maintained in a clean and sanitary condition at all times.

Observation: Front cooler was milk and dairy cream was at 7C.
Corrective Action(s): Service cooler unit and ensure it can maintain 4C or less at all times to prevent the growth of pathogens and or the formation of toxins. Dairy was relocated to a cooler at 4C at the time of inspection.

Comments

-Walk-in cooler was at 3C.
-Prep cooler was at -15C and -16C.
-Front beverage cooler was at 4C.
-Front bar cooler was at 7C - potentially hazardous foods have been relocated.
-Chest freezer was at -16C.
-Hot holding was greater than 60C.
-BBQ meat was less than 4C - items have been properly cooled.
-Chemical dishwasher had a final rinse of 50ppm chlorine on the dish surface (minimum 50ppm required for proper sanitizing).
-Handwash stations accessible and supplied with hot and cold running water, liquid hand soap, and single use paper towels.
-Bleach sanitizer pail properly labelled and tested at 200ppm.
-No signs of pests noted at the time of inspection.
*FoodSafe certificates issued prior to July 29, 2013 expire on July 29, 2018.
