Note: no Vietnamese sub preparation at this time.

Food processing (including vacuum sealing) of Vietnamese hams/balls, sauces, pickles, spring rolls, and marinated meat (uncooked).

Hand sink in front area provided with liquid soap and paper towels.
Hand sink in back processing area provided with liquid soap and paper towels.
100ppm bleach available for use in labeled spray bottles.
3 compartment sink available for sanitizing equipment and utensils.
Grinder and chopper clean in place. Equipment is sanitized with bleach solution after and prior to use.
Walk in cooler at or below 4 degrees C.
Walk in freezer at -18 degrees C.
Retail area cooler at 2-3 degrees C. 2 door freezer at -12 degrees C. Monitor and ensure -18 degrees C or less.
Sliding glass top freezer -18 degrees C.
