Follow-up Inspection conducted today for report#JCHY-CDURHF.
The following violations have been corrected in report#JCHY-CDURHF.
-No potentially hazardous foods (e.g.: chopped cilantro) observed to be stored outside at room temperature.
-Somosas observed to be made to order. No Somosas observed to be hot-held. Hot-holding unit is turned off. Operator informed they will no longer use it. Remove hot-holding unit not related to regular business operation out of premises.
-Can opener blade, knives, dough roller observed to be in sanitary condition. Kitchen equipment (dough roller, knives, can opener) are washed and sanitized after each-use.
-Chlorine sanitizer buckets and spray bottles in the front and kitchen area measured at 200ppm.
-Ice machine in sanitary condition. Ice scoop is hooked inside the ice machine to prevent direct contamination.
-Improvement made underneath the major kitchen equipment (deep fryer, tandoor, gas range, etc.) to remove grease build-up.
-Improvement made underneath and behind the prep cooler, handwashing sink, chest freezer, dishwashing pit, gas stove equipment, stainless steel worktable beside deep fryer, and dough mixer to control rodent droppings. Pest Control Company, APC Pest Control Services LTD, contracted 2x/week. Recent pest report on April 28, 2022 indicates 2 mice found in mouse traps underneath the dishwasher and that sealing of gaps in the dry storage area was done.
Handwashing sink well equipped with hot and cold running water, liquid soap, and paper towels.
Sweet display cooler measured at 4C air ambient temperature where the barfi (milk-based) was stored. Educated operator that all milk-based sweets (Barfi) must be stored under a cooling unit able to hold an air ambient temperature of 4C or lower. Alternatively, may store barfi under room temperature for 2 hours on the basis that they can provide time logs that the barfi have been out of temperature control. Operator receptive and understands that barfi must be cold-held at 4C or lower. |
