306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation:
The sanitation level of the facility is poor. There is accumulated food and grease on the following areas, which will attract pests:
- Walls from floor to ceiling.
- Shelves and racks.
- Prep tables, counter tops, sinks and the undersids of them.
- Legs of tables and equipment.
- Floors under cooking equipment (deep fryers), sinks, and shelving units.
- Exhaust canopy was required to be professionally cleaned in Dec. 2017 (as per service sticker).
- The exterior surfaces and handles of equipment (coolers, freezers, cooking equipment, etc.).

Corrective Action(s):
A thorough, detailed cleaning of the facility surfaces and equipment, is required to be done. All items & equipment shall be moved so all surfaces under, between, and behind can be washed with hot water and soap, and sanitized with bleach. Increase the frequency at which all these areas are cleaned.

307 - Equipment/utensils/food contact surfaces are not of suitable design/material [s. 16; s. 19]
Observation:
Found surfaces (tables, shelves, countertops) being covered with aluminum foil, to prevent or decrease cleaning of these surfaces. Aluminum foil is not durable or cleanable, and shall not be used to cover surfaces.
Corrective Action(s):
Immediately remove all aluminum foil from surfaces. Instruct all staff that these surfaces must be cleaned daily with hot water and soap to remove food and grease.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation:
1) The large chest freezer lid and gasket is severly broken and does NOT fit tightly to the freezer base. The plastic has separated from the lid and the insulation is falling out. This is not acceptable and unsafe.
2) The low temperature dishwasher was not being used as there was no soap available for use. The dishwasher requires to be in working order as the existing 3-comp. sink will be overloaded with food preparation and dishwashing. Staff explained that more soap will be arriving this afternoon.
Corrective Action(s):
1) Immediately replace the large chest freezer with a new one so the lid fits and closes tightly, to keep the food cold.

2) Immediately order more dishwasher soap and manually wash the dishes using the 3-comp. method. Dishwashing and food prep shall NOT be done at the same time in the sinks. Manually washing dishes by washing all sinks to remove food and dirt; then fill first sink with hot water and dishsoap (present in facility); fill second/middle sink with hot water; and fill third sink with hot water and bleach (1/2 cup); and then air dry. Review these proper washing steps with all staff. At time of inspection, staff were manually washing dishes.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation:
Various areas of walls and corners of the facility have dents, chips or peeling paint. These areas expose unsealed drywall that is no longer durable, cleanable, or sealed. This will attract pests and make cleaning of these surfaces difficult.
Corrective Action(s):
Repair and repaint all these damaged areas so that the surfaces are smooth, level, sealed, impervious to water, and cleanable.

Comments

A routine inspection was conducted, the following observations were made:
- Coolers 4C; freezers -16C or colder; thermometers present.
- Hand sink stocked with liquid soap, paper towels, and running hot and cold water.
- Bleach and Quats present for sanitizing. Quats sanitizer from dispenser was 200ppm. No bleach solution was mixed up at time of inspection.
- FoodSafe certified staff present.
- Foods stored in food grade containers; covered; in groups with raw proteins below or separate from RTE foods; and 6" off the floor on shelves.
- FoodSafe certified staff present.
- General sanitation is poor, immediate improvement required. No signs of pests.
- No expired foods for sale. FIFO rules being followed.

**Follow-up inspection was be complete on July 19/18, to ensure violations have been corrected**
