Comments

-Follow-up inspection to January 04, 2022.
-Facility has obtained test strips for both chlorine and Quats sanitizers. Sanitizer strength is tested and recorded daily to verify concentration. Signage posted at the Quats sanitizer dispensing station to remind staff to run the sanitizer for 5 seconds prior to filling spray bottles.
-Chemical dishwasher had a final rinse of 50ppm to 100ppm chlorine on the dish surface (minimum of 50ppm required for proper sanitizing).
-Quats sanitizer spray bottles were tested at 200ppm. Containers were properly labelled at the time of inspection.
-Deli slicer was found to be clean and sanitary. Slicer is broken down at the end of the night for cleaning and sanitizing. If slicer is used throughout the day, it must be sanitized at least every 4 hours.
-Sushi area handwash station has been serviced and was no longer leaking water.
-Scoops were stored properly and in a sanitary manner at the time of inspection.
-Did not find any dented cans of food at the time of inspection.
-Shatter shields have been replaced for the light fixtures in the kitchen.
-New cutting boards have been ordered and are scheduled to arrive in February.
