Observation (CORRECTED DURING INSPECTION): Handwashing sink in deep fryer/grill area was blocked by a baking tray of fries which was stored on top.
Corrective Action(s): -Handwashing sinks must remain accessible at all time. Additionallly, food be protected from potential sources of contamination such as splashing from handwashing.

Comments

-Premises maintained in a sanitary condition. Note: Some minor areas of the premises are showing signs of wear (ie. finish on side of cabinet coming off, small dents in walls where drywall is exposed). These areas will need to be addressed so that surfaces are maintained in a smooth, washable condition.
-Handsinks supplied with hot and cold water, liquid soap and paper towel. Gloves in use. Ensure staff are reminded to change gloves and wash hands whenever hands may have become contaminated.
-Coolers were operating at acceptable temperatures (4C or colder):
-Walk-in cooler 4C *Initally cooler was at 6-7C; however, temperature dropped after lunch service. Ensure cooler is not overstocked and fan is not blocked to allow for proper air circulation.
-Sliding door cooler (CLR11) 4C
-Front line cooler (CLR12) 4C
-Dasani self serve drink cooler (CLR 1) 4C
-Habco self serve sliding door cooler (CLR2) 4C

-Freezers were operating and maintaining product in a frozen state:
-Coldstream freezer -12C
-True (bread) freezer -12C
-True (meat) freezer -20C
-Hot holding temperature of soup was 60C
-Cold storage, hot holding, cooking and re-heating temperatures monitored and recorded. Ensure corrective actions are recorded when temperature requirements are not met.
-Ice machine appears clean/maintained. Ice machine is cleaned monthly. Scoop stored in holder.
-High temperature dishwasher was functioning and met sanitizing requirement. Final rinse was 73.8C at dish surface. Wash and rinse temperatures are checked daily. Thermolabel used for rinse temp.
-Quats sanitizer (200ppm) present in spray bottles for sanitizing food contact surfaces. ***Ensure clean wiping rags are used with spray bottles and soiled wiping cloths are not on counters.***
-No signs of pest activity noted at the time of the inspection.
