Corrective Action(s): -Defrost freezer and thoroughly clean the inside of both the fridge and the freezer to remove all spills/food debris. Correction date: Jan. 15/17

Observation: Mouse droppings noted in the following areas:
-near the hot water tank
-under the three compartment sink and dishwasher
-under shelving unit adjacent to dishwasher
Corrective Action(s): 1. Remove all moveable items (bins, boxes) from the kitchen floor. Clean up all droppings and use bleach solution to disinfect areas. Keep floor area clear to facilitate cleaning and monitoring.
2. Retain Pest Control contract to address rodent issues. Keep copy of contract and report on-site. Follow instructions/recommendations of Pest Control Technician. Correction date: Jan. 12/18

Observation: -Grease and food debris noted in hard to reach areas - under grill fryer area, at edges of the floor and around equipment
-Thick grease layer/dust noted on top of fridge
Corrective Action(s): -Remove all moveable items from the floor and thoroughly clean the entire floor paying particular attention to hard to reach areas.
-Clean top of fridge. Correction date: Jan. 15/18

-Cold holding temperatures were acceptable:
-Fridge/freezer 3C/-12C
-Chest freezer -15C
-Line cooler 4C
-Hot holding temperatures were acceptable (>60C)
-Rice in the rice cooker 73C
-Soup on the stove 65-67C
-Veggies wontons in warmer 63C
-Bleach solution (100ppm chlorine) present for sanitizing food contact surfaces
-High temperature dishwasher met sanitizing temperature. Rinse temperature measured with min/max thermometer was 71C
