Observation (CORRECTED DURING INSPECTION): Half a container of cooked chicken made the previous night was at 8C. Chicken was cooled in the container in the prep cooler.
Corrective Action(s): Hot potentially hazardous foods must be cooled from 60C to 20C in 2 hours or less and from 20C to 4C in 4 hours or less to prevent the growth of pathogens and or the formation of toxins. To rapidly cool foods, place cooked chicken into shallow pans in single layers or place foods in the freezer. Chicken was discarded at the time of inspection.

Observation: Kitchen upright cooler was still at 8C. Technician has not been able to service cooler. Operator stated cooler unit is below 4C in the morning. Cooler is unable to maintain proper temperatures throughout the day.
Corrective Action(s): Service cooler unit to ensure it can maintain 4C or less at all times.

Comments

-Follow-up inspection to March 6, 2019.
-Facility has been serviced by professional control services on March 7 and March 18. Pest control report indicates evidence of pests in the facility. Pest control services has installed glue boards and metal tin cat monitoring stations. Pest control is on a monthly service basis.
-Areas affected with rodent droppings have been cleaned and disinfected.
