301 - Equipment/utensils/food contact surfaces not maintained in sanitary condition [s. 17(1)]
Observation (CORRECTED DURING INSPECTION): 1) Green bucket with sanitizer used to store tongs and knife in between uses for cutting/handling food.
2) Wet/used cloths used for wiping espresso machine between use and counter tops observed sitting on counter. Staff stated they are changed once per day mid way through store hours (~5 hours).
3) Dishes that are manually washed are not being sanitized after washing and rinsing.
Corrective Action(s): 1) Any utensil that is in continual use should be fully cleaned every two hours. Discontinue sanitizer bucket method for tongs and knives. (Alternatively an ice bath my be used for spoons for drinks).
2) Cloths in continual use must be stored in a sanitizer bucket (eg. 5mL bleach in 1L water)
3) Remind all staff that dished must be washed, rinsed and then sanitized with an approved sanitizer. Dish washing sign provided, post above two compartment sink today.

Observation: Stairwell area to upstairs unit is blocked off and is being used as a storage area. This area was not previously approved for use for storage for premise and stairs are carpeted which is absorbent and not easily cleanable.
Corrective Action(s): Remove carpet or install a cover that is durable, non-absorbent and easily cleanable over stairs. Due: 1 month.

Observation: Several fruit flies observed inside of covered back rack used for storage of baked goods. Fruit fly trap present on top rack.
Corrective Action(s): Thoroughly clean rack and any trays not in use. Store any clean trays that are not needed outside of rack and continue to monitor and change trap at least weekly.
