Observation: One basket of fish in prep cooler was uncovered. Fish stored in walk-in cooler was also uncovered at time of inspection. Manager stated that thawed out fish is placed into walk-in cooler uncovered in baskets so that water can be strained from fish.
Corrective Action(s): As previously discussed, ensure all foods stored in coolers are properly covered to protect from contamination. Fish straning in baskets must also be covered.

Comments

- Soap dispenser for hand sink in kitchen was working properly at time of inspection. Good.
- No uncovered food items in containers were stacked directly on top of one another at time of inspection, other than raw fish that was being strained of water. *Ensure all fish is transferred to containers with covers at the end of each day after they have been strained dry.
- All other items in coolers were properly covered
- Tartar sauce for take-out orders was not being stored out at room temperature at packing station - good.
- No fish was thawing in sink at time of inspection.

Note: Facility had just received delivery prior to beginning of inspection. Buckets of tartar sauce were in the process of being portioned into small take-out sauce containers, and all delivered items still had to be put away. Temperatures of delivered items were still below 4C.
**Ensure all perishable items received from delivery are put away immediately - this must be done prior to any processing/portioning of ingredients.
