Observation: A small number of droppings was observed on the floor underneath the countertop holding wine glasses. A professional pest control company is onsite regularly.
Corrective Action(s): Continue with a professional pest control company, clean the droppings with a bleach solution and ensure that any potential entry points behind or into cabinets are sealed.

Comments

-Recommend installing additional shelving in the back storage area.

Hand sinks were supplied with hot and cold water, soap and paper towels.
All coolers were < 4 C.
All freezers were < -18 C.
Hot held foods were > 60 C.
The dishwasher reached > 71 C (76 C) at the plate level. Ensure that it is checked daily. A max hold thermometer is available for checking dishwasher temperatures.
Bleach sanitizer solution had 100 ppm chlorine.
The ice machine was kept in a sanitary condition.
The ventilation hood was clean. Next cleaning is scheduled in April.
The owner has FoodSafe level 1 training, expiring in 2027.
General sanitation was satisfactory.
