Observation (CORRECTED DURING INSPECTION): 1) Sushi bar left cooler measured to be at 8C.
2) Prep cooler in the middle row of the kitchen top containers measured to be at 11C
Corrective Action(s): 1) Spicy tuna, salmon, smoked salmon, scallops measured to be at 8C~9C and were prepared 5 hours ago. Operator discarded previously mentioned items at the time of inspection. DO NOT USED COOLER UNTIL IT HAS BEEN REPAIRED OR REPLACED.
2) Sliced radishes, cooked mushrooms, sliced cucumbers, and steamed broccoli were probed to be near 11C. Operator discarded previously mentioned items at the time of inspection. Do not stack inserts that were not designed to fit into this prep cooler.
