Observation: No paper towels were available at the front hand sink.
Corrective Action(s): Ensure paper towels in wall-mounted dispensers are provided at each hand wash sink ( Immediately).

209 - Food not protected from contamination [s. 12(a)]
Observation (CORRECTED DURING INSPECTION): A bucket containing marinated raw chicken was found stored above the green/red peppers in the upright fridge.
Corrective Action(s): Do not store raw meats or poultry above any vegetables or ready to eat food products. Raw meats or poultry must always be store on the lowest shelves of the fridge to prevent cross contamination.

304 - Premises not free of pests [s. 26(a)]
Observation: Some drain flies were noticed around the sinks. This is indicative of build up inside floor drains or sink drains or grease trap.
Corrective Action(s): Hire a licensed grease cleaning company to perform through clean up of grease trap and floor drains. Ensure to throughly clean all sink drains. Ensure to cover the floor drain cover during dry cleaning of floor to avoid food solids from plugging the floor drains ( Immediatley).

306 - Food premises not maintained in a sanitary condition [s. 17(1)]
Observation: 1. Build up of dirt noticed on the ceiling tiles especially around air vents. Build up of grease, food debris, and burnt charcoal pieces noticed behind the grill and deep fryers, underneath the dishwasher and wash sinks, underneath the deep freezes other equipment.
2. Grease trap and floor drains require cleaning.
Corrective Action(s): 1. Move all equipment, fridges, freezers and tables etc, to throughly clean the kitchen floor to remove the build up ( By September 21, 2018)
2. Clean the ceiling tiles to remove dirt and soot build up ( By September 25, 2018)
3. Hire a grease trap cleaning and removal company to properly clean the grease trap and the floor drain. ( By Sep 25, 2018)

Comments

* All food items must be stored on the shelves at least 6 inches off the floor.
* A cart must be purchased to store bus pans containing dirty dishes and small organic bins.
* Ensure that no beverage bottles or pop cans etc are stored on the floor. All food or beverage or food related articles must
be stored at least 6 inches off the floor.
* Do not store or prepare foods on top of the deep freezer ( freeze lid ). Freezer lids are head to clean, build up of caked flour was evident.
Use a custom cut cutting board on top of the freezer or a separate stainless steel table for storing food containers or food preparation.
* All deep freezers must be on casters ( wheels) to allow for proper cleaning underneath the freezers.

* Temperature logs were incomplete. Ensure to write the actual temperature reading taken off the thermometer on paper-based log sheet instead of
writing on a plastic sheet.

Dishwasher final rinse registered 72 C at the plate surface.
Upright coolers < 4 C.
Preparation cooler across from the grill < 4 C.
Front preparation cooler < 4 C.
Beverage coolers < 4 C
