All critical hazards have been corrected, all other work is progressing, pest control program implemented and several UV lights installed - still a significant fly problem in the kitchen that needs to be addressed.
Make sure ALL garbage cans have tight fitting lids that are in place at all times; that kitchen staff do not leave uncovered foods unattended - if they need to leave the kitchen make sure that ALL foods are covered to prevent contamination.
DO NOT allow ANY member of the public into the kitchen, this area is for employees only. If a customer wants their fruit/vegetables washed this should be done by employees only.
Stainless steel table with produce displays has been partially cleaned but needs to the thoroughly broken down; ALL supports, bins, baskets etc as well as the table itself needs a thorough cleaning AND sanitizing.
Condenser in walk-in cooler still spraying mouldy water, clear all produce from within 6 feet of the condenser to ensure no droplet contamination of ready to eat food occurs.
