Observation (CORRECTED DURING INSPECTION): Observed two buckets of onions stored below the hand washing sink and next to a garbage in the back of the kitchen. No covers were noted. This is a repeated observation.
Corrective Action(s): Required operator to store foods away from garbage cans and away from sinks as splashes and other contaminants can enter foods. Provide adequate covers for these buckets of onions.

High temperature dishwasher in good working order; detected 74.6 C at plate level after final rinse cycle
All coolers at 4 C or lower; all freezers at -18 C or lower; hot holding units at 60 C or higher
*Noted prep line lid was propped open as lunch rush is coming. Ensure to keep them closed when not busy as top lines can warm up quickly*
*Noted cooked fish stored at room temperature. When inquired, operator indicated that they are cooked between 10:30-11:00. Inspection conducted at 11:30AM. Ensure to follow proper cooling procedures and transfer all potentially hazardous foods to a working cooler
Ice machine maintained in sanitary condition
Bleach sanitizer available; detected 200 ppm of residual chlorine
No sign of pests noted at the time of inspection.
**Slightly cramped in the back area due to limited space. Ensure to organize and discard all items that is not in use to free up space.
