Routine Inspection Conducted Observations: - Sushi display cooler and storage coolers at or below 4'C - Sushi rice measured at pH = 4.0 with test strip - Temperature logs are verified maintained on site - General sanitation of sushi preparation area is satisfactory - Hand washing station supplied with hot and cold running water, liquid soap and paper towel - 3-compartment sink available with drain plugs and QUATs sanitizer - QUATs sanitizer in sanitizer pail measured at 200 ppm QUATs concentration - All food is stored at least 6 inches off the floor and covered - Equipment stored in a sanitary manner - No signs of pests during time of inspection - FOODSAFE Level 1 trained staff available on site - Staff observed wearing clean uniforms Notes: - No signature required due to COVID - Inspection report will be emailed to the operator Please contact the health inspector for any questions or concerns.
