Observation (CORRECTED DURING INSPECTION): Cake and Cream puffs made of fresh cream were stored in a display cooler at 6 deg C overnight. Internal temperature of cream puff is at 8 deg C.
Corrective actions: Discard all the cake and cream puffs and do not store in new food items in the cooler until the cooler is fixed and maintained at 4 deg C or less. Transfer cookies and loafs into the undercounter cooler.

Observation (CORRECTED DURING INSPECTION): Food not protected from contamination
1) Eggs in the 2-door cooler in the back were stored above fresh produce and salad vegetables.
2) Egg solution used for egg wash wasn't being discarded and left out in room temperature and attracted flies.
Corrective action: 1) place raw eggs on the lowest shelf in the cooler to prevent potential cross-contamination
2)Discard the egg solution and do not leave food uncovered in room temperature in the future

Observation: Front display cooler is measured at 6 deg C. Staff noticed the elevated temperature of the cooler in the morning and informed the manager and called technician
Corrective actions: Repair the storage display cooler and do not use it until it's able to maintain at 4 deg C or less.

Temperatures:
-Freezer in the back: -9 deg C
-2-door cooler in the back : 2.8 deg C
-front 1-door freezer: -14 deg C
-front 2-door undercounter cooler: 2.0 deg C
-Front display cooler: 6 deg C
-High temp dishwasher: 71 deg C on the plate level after 3 runs
-All handsinks are fully stocked with liquid hand soap, paper towel and hot/cold running water
-Ice machine is clean and scoops stored on clean counter .
-Sanitizer bottles in front and back : 200 ppm QUATS.
-Front display cooler was recently added (approx. 2 months ago) and menu was extended
-->need to inform fraser health and provide updated menu and equipment list.
-In-use utensils were washed and sanitized every 2-3 hours
-One washroom was being used to storage packaging items and cleaning chemicals.
-->recommend to increase shelves in the back storage area since washroom is an unsanitary area to store items.
-All staff on site have food safe
- permit posted in prominent place.
- General sanitation is satisfactory and no signs of Mouse dropping noted
-pest control company is OrKin and they comes in twice a month. No pest activity noted in the latest pest Inspection report.
