Observation: Mouse droppings noted in various areas of the facility - in the cabinet below the meat slicer, in the cabinet by the cash register and in the store room.

Corrective Action(s): Discard any food or food contact items that have came into contact with the mouse droppings. Clean, rinse and sanitize the abovementioned areas of all droppings. As per operator, mice was a concern in the past. A pest control company did come in to help address the situation.
Please clean and sanitize the areas noted as this will allow us to see whether this is a new issue or a re-occuring issue.

308 - Equipment/utensils/food contact surfaces are not in good working order [s. 16(b)]
Observation: 1. 2-part sink not draining properly. Water build-up noted in one of the compartments of the 2-part sink. Leaking noted below the 2-part sink.

2. Upright freezer in the storage room noted at 3.2 C. As per operator, one of the staff forgot to close the freezer door properly, leading to an increased in temperature. Food in the unit was noted <4 C. Pooling of liquid noted in the freezer unit.

Corrective Action(s): 1. As per operator, a plumber has been called to address the issue with the 2-part sink. Fix the 2-part sink to allow for proper drainage and fix the leaking issue.
2. Move all food in the freezer to a functioning cooler unit and discard or serve the food in the freezer within the allowable date specified for cold potentially hazardous food storage as per your Food Safety Plan. Clean and sanitize the freezer. Monitor the temperature of the upright freezer unit, if unable to maintain food ≤ -18 C, then call for maintenance.
