Observation: Small defrost cooler - food and air temperature above 40F. Measured about 44F (6C).
Corrective Action(s): Store potentially hazardous food, including defrosted food, at 4C (40F) or colder. Check temperature again in 1 hour and move to walk in cooler if temperature requirements are not met.

Observation (CORRECTED DURING INSPECTION): Taquitos are being hot held at 122F (your thermometer 132F).
Corrective Action(s): Reheat the taquitos to required tempterature as per your food safety plan. Your probe thermometer must be accurate. Verify accuracy of thermometer.

Observation: Tongs washed and sanitized daily. Self serve spoons for condiments washed and santized every 2 days.
Corrective Action(s): Wash, rinse, sanitize, and air dry all utensils more frequently. Provide copy of your corporate sanitation plan to Fraser Health.

Observation: Hot water was measured at about 30C at the triple sink and 90F (33C) at the hand sink.
Corrective Action(s): Provide a minimum of 38C hot water for hand washing and about 45F for utensil cleaning.

Manager on site states has a valid Food Safe (or equivalent) training certificate. Check expiry dates and renew before expiry. Keep copy of certificate on site.
Coolers - satisfactory with exception of small prep/defrosting cooler.
Hot holding - see above.
Temperature are being kept and recorded - check accuracy of thermometer.
Hand washing station has liquid soap and paper towels -see above re hot water.
Disposable non latex gloves used.
Quats sanitizer - automatically dispensed - ok.
Cleaning -see above.
Pest control - monitoring in place. Holes in ceiling and walls were recently sealed.
Continue to monitor and improve cleaning as part of pest control plan.
Report reviewed with manager.
