Comments

- Dishwasher was repaired and bucket of chlorine sanitizer replaced. Dishwasher now dispensing 50ppm chorine in rinse cycle which is adequate to sanitize dishes. Chlorine test strips present for checking concentration - Check daily prior to using.
- Food contact surfaces appeared to be in sanitary condition and free from storage of personal items. Quats sanitizer
- Cloths no longer in use for preparation of roti. Product is now stored on trays which can be washed and sanitized. Paper towel used to line tray for cooked product discarded after one use.
- Area behind hot water heater has been cleaned to remove rodent droppings. Glue board has been placed in this area for monitoring purposes.
- Miscellaneous items (trays, cardboard) which were stored in storage room and not needed for the business, have been removed from the premises.
- Labels now present for labelling packages of roti which are distributed to other food premises.

Pending issue to be completed:
- Operator to update sanitation procedures to clearly outline sanitizer being used to sanitize food contact surfaces and equipment. Refer to violation code 314 from routine inspection report (23-Mar-2022). Template provided to Operator. Email updated sanitation procedure to undersigned by 06-Apr-2022.
