-Meat grinding room temperature was 7C
-Handwashing station was properly equipped with liquid soap and paper towel
-Quats sanitizer available at 200ppm
-No expired meats were noted (random checks)
-Meat tenderizer disassembled and being cleaned and sanitized
-Tenderized meat was properly labelled
-General sanitation was very good
-Good personal hygiene noted (hair nets used)
-Temp log sheets are in place and up to date.
* person in charge reported hot water not working in back hand wash sink, and one of the thermometer is broken in meat display cooler- work orders are being issued- corrective actions explained by the staff are satisfactory
