Observation (CORRECTED DURING INSPECTION): Upon arrival of EHO dishwasher running at 0ppm Chlorine at the plate. The sanitizer solution had expired and was not strong enough to provide 50ppm Chlorine at the plate. Owner would know this if dishwasher was being tested daily to ensure 50ppm Chlorine was obtained at each sanitizing cycle.
CORRECTED DURING INSPECTION. Sanitizer solution changed and reading of 50 ppm Chlorine reached.

This has not been occurring. Unacceptable practice. Do not repeat.

Duct tape should not be used in food preparation areas. Replace handle with smooth, durable, non-absorbant material that will not break (as discussed at inspection). Seek out replacement handles at home improvement store.
