Observation (CORRECTED DURING INSPECTION): Food not protected from contamination.
Observation: Garbage bin was stored on top of flour bags in the dough-prep area.
Correction: Operator moved the garbage bin down to the floor at the time of inspection. Flour bags were inspected for contamination (ripped packaging) but were intact and the bin had not been used.
Rationale: Garbage is a source of contamination that can cross-contaminate food and cause a foodborne illness.

Pest-proof containers in use. Scoops are stored outside.
All items were covered with lids or plastic wrap inside the cooler.

Staff practices good personal hygiene.
They were observed for proper handwashing.
Hair restraints are used (caps).
