302 - Equipment/utensils/food contact surfaces not properly washed and sanitized [s. 17(2)]
Observation (CORRECTED DURING INSPECTION): Did not detect any sanitizer (0ppm) in container with cloths submerged at drink making area. Staff on duty said it is about time to change the sanitizer.
Corrective Action(s): Ensure sanitizer solution is changed routinely or as needed throughout the day to maintain minimum 100ppm chlorine concentration.

401 - Adequate handwashing stations not available for employees [s. 21(4)]
Observation (CORRECTED DURING INSPECTION): Noted several used spoons for making drinks being stored in the hand sink in the drink making area. The spoons are used once then stored in the sink until staff take them to the dishwasher to be cleaned.
Corrective Action(s): Do not store any utensils or equipment in the designated hand sinks. Use a bin to collect dirty equipment instead.

Comments

- Hand wash stations equipped with soap, paper towel, hot and cold running water. See violation code 402 re: used utensils in hand sink at drink making area
- All cooler 4C or less (prep, open display, 1 door undercounter,.. etc)
- Chest freezer -18C
- Hot holding of soup 64C
- Staff confirmed that soup is heated in microwave to 74C minimum and transferred into preheated hot holding unit to be maintained at 60C
- High temperature dish washer achieved 71C (as per thermolabel)
- Chlorine sanitizer in spray bottle 100ppm - see violation code 302 re: sanitize in container with cloths submerged at the drink making area
- General sanitation satisfactory. No obvious sign of pest activity noted at time of inspection.
- Gelato freezer with dipper well not in use. Operator plans to remove gelato freezer from premises. Floor plans have been approved by health department and operator is just waiting to have the renovations done.
- No ice machine on site at time of inspection. Old ice machine has been removed from premises and will be replaced with a new one. Currently, ice is purchased from save on and stored in a bin with lid in the chest freezer. Scoop for ice is stored outside of the ice bin in a separate container.
- Staff on duty in operator's absence had foodsafe training.
- Sandwiches, soups and desserts come in premade and appear to be from approved sources.
