Operator informed over phone that he has received the permit to operate and he would post it in a conspicuous location of this food service establishment Raku Sushi.

Comments

Handsink (foot pedal operated type) was properly supplied with hot water, liquid soap, and single-use paper towels.
Staff member was washing her hands properly.
Refrigeration units (shared walk-in-cooler, three under-the-counter coolers and display retail cooler) were at or below 4 degrees C.
Refrigeration units were equipped with thermometers.
Temperature record log was being maintained.
Sushi rice is held at ambient temperature no more than 2 hours according to staff.
No food preparation was occurring at the time of inspection. Staff was in the process of sanitizing preparation surfaces.
200 ppm QUATS sanitizer was available in the spray bottle.
No signs of recent pest activity were evident at the time of inspection.
3-compartment sink is shared with the Bakery/Deli Department of Walmart. Single-service utensils only.
Food storage areas appeared clean at the time of inspection.
Staff on shift held valid FOODSAFE Level 1 course training (expiration date: December 17, 2024).
