Health rationale: Scoop handles can potentially contaminate food.
Corrective action: Remove scoops from flour container. Ensure all scoops are placed outside containers to reduce risk of contamination.

Observation: Observation: Areas behind and beside cooking units have accumulation of grease.
Health rationale: Grease build-up can attract pests which are carriers of disease.
Corrective action: Clean all hard to reach areas behind and beside booking units to remove grease build up and ensure these areas are cleaned frequently to avoid build up in the future.

Observation: Both operators on premises have expired Foodsafe Level 1 training. (one expired April 23, 2021).
Health rationale: Foodsafe Level 1 training educates Food Handlers about safe food practices for handling, storing and cooking food. Without adequate updated training, food handlers may not be able to maintain safe food handling practices.
Corrective action: Apply for Foodsafe Level 1 training and complete. Ensure updated Foodsafe certificates are kept in premises. One employee must have Foodsafe Level 1 training on premises and in operator's absence.

Observed during inspections:

1) Temperatures:
-Stand up freezer at -18C
-Stand up cooler at 4C
-Sandwich cooler adequate: Top at 3C, Bottom at 3C
-Beverage cooler at 4C
Hot-held soup probed at 73C (above minimum of 60C)

2) Sanitation:
-Dishwasher chlorine concentration (bleach) measured at 100ppm at plate surface.
-Sanitizer bottle measured at 200ppm QUATS concentration.
-Hand sinks in staff washroom and front service area adequately supplied with hot and cold running water, soap and paper towel.
-Beverage/soft drink dispenser knobs kept in clean and sanitary manner - excellent!
-All cooking equipment is stored in a clean and sanitary manner.

3) Storage:
-All foods are placed off the ground.
-All cooler and freezer items are covered and protected from contamination.
-All single-use disposable containers stored in sanitary manner.

4) Pests:
-No signs of pests during time of inspection.
-Pest management company contracted. Operator mentioned they come in for monthly checks.
-Operator mentioned bleach is poured down drains to prevent flies from harbouring - excellent!

5) Administration:
-Operating permit visible. Operator mentioned Health Approval/permit fees have been paid for renewel.
