Observation: Debris build up noticed on the floor behind and the steam oven and the space between the front and back cook lines.
Corrective Action(s): Ensure to thoroughly clean areas underneath and behind equipment and all hard-to-reach areas (By November 3, 2017).
-Ensure to wipe off grease build un on the fume hood surfaces above the deep fryers on a weelly basis.

311 - Premises not maintained as per approved plans [s. 6(1)(b)]
Observation: Noticed lifted off floor in the walk-in cooler along the freezer wall. Observed codensation and debris in the gap along the floor wall junction. Similar issue noticed underneath the dishwasher.
Corrective Action(s): Repair or replace the floor to ensure it is completely sealed/coved along the floor wall junctions. Better insulation may be required in between walk-in cooler and walk-in freezer (November 20, 2017).
