Observation (CORRECTED DURING INSPECTION): Did not detect any sanitizer in container of water with cloths submerged (located in the kitchen area). Operator said he had run out of bleach. Operator went to the store and obtained bleach at time of inspection
Corrective Action(s): Ensure sanitizer is readily available at all times during food preparation.

Comments

Hand wash stations had soap, paper towel, hot and cold running water
All coolers 4⁰C or less (prep cooler unit, upright cooler, walk in cooler unit, undercounter cooler units at bar...etc)
Freezers (chest freezers x3, upright one door freezer unit...etc) less than -18C
No hot holding available at time of inspection. Most dishes are prepared per order.
General sanitation satisfactory. No obvious sign of pest infestation noted at time of inspection. Back door to the outside was closed.
Meat slicer appeared clean at time of inspection.
Ice machine appeared clean with scoop for ice stored outside of the ice in a separate container.
100ppm chlorine sanitizer available in spray bottle at the front bar area.
Low temperature dish washer had 50ppm chlorine. Test strips available to check.
All stored foods appeared protected (ie. stored off the ground, covered, lights have covers or sleeves, no food noted in back hallway...etc)
Staff washroom door is self closing
