Observation: Main walk in cooler power went out in early morning. All potentially hazardous food items inside tested internally at 18c.

Observation (CORRECTED DURING INSPECTION): Glasswasher initially dispensing approx 20ppm chlorine in final rinse.
Corrective Action(s): Once new sanitizer container was installed and unit primed, a residual of approx 75 ppm chlorine was detected in final rinse.
Ensure your are checking the glasswasher residual concentrations daily using your chlorine test strips.

Observation: Main walk in cooler not cooling/cold holding. Electrician was on site initially and had the cooler operational again.
Front beveridge cooler not properly cold holding. Therre are no PHF's stored inside.
Corrective Action(s): Donot use the walk in cooler until repaired. Premises has sufficient cooler space in the dry food storage room to store newly made products.
