Observation: Mouse droppings observed on the floors of the exterior storage unit. Only chemicals, extra containers, canned pops and bottled alcohol stored inside. Last pest control inspection conducted in Jan 2023, as per pest control summary report.
Corrective Action(s): Do not store any foods inside the storage unit. Follow the recommendations by the professional pest control company.

Observation: Sauce bar cooler (front of house) measured 8.8C ambient temperature. Minced garlic, diced vegetables, and sliced fruits (dinner only) stored inside. Manager is proposing to use ice to keep foods cold.
Corrective Action(s): Fix or replace the cooler. The sauce bar cooler must maintain temperature < or = 4C at all times.

Comments

- General sanitation is satisfactory.
- All handwash stations supplied with hot/cold running water, liquid hand soap, and single use paper towels from dispensers.
- High temperature dishwasher achieved 77.7C at the plate's level during the final rinse cycle.
- Glasswasher dispensed Iodine sanitizer at 12.5ppm concentration.
- Dry storage area has adequate space, shelves, cabinets.
- FOODSAFE level 1 trained staff on duty. Verified at the time of the inspection.
- Valid Operating Permit posted in a conspicuous area.
- Washrooms in clean condition.

Temperature control:
- All coolers < or = 4C.
- All freezers < or = -18C
- Rice cooker > 60C
- Working thermometers inside all coolers.
- Daily temperature log available, kept up to date.
