Observation (CORRECTED DURING INSPECTION): Boba pearls measured 45 deg.C. Staff said they were made approximately 3 hours ago
Corrective Action: Pearls discarded. Staff educated on alternative storage methods such as hot holding above 60 deg.C or storing for 2 hours at room temp using timers.
Food must be stored > 60 deg.C or < and/or = 4 deg.C to prevent pathogen growth.

Observation (CORRECTED DURING INSPECTION):
1) Staff indicated wares are dipped in sanitizer during manual warewash procedure:
2) Cleaning rags left on the counter. Staff says they are used every hour for cleaning.
Corrective Actions:
1) Staff educated on warewashing procedures. Wares must soak in sanitizer for 2 minutes before air drying.
Adequte sanitation is essential in destroying pathogens
2) Cleaning cloths must be left in sanitizer when not in use
Cloths can encourage pathogen growth when wet and soiled and must be soaked in sanitizer to prevent growth.
