Observation (CORRECTED DURING INSPECTION): 1. Wiping rags were sitting in 0 ppm quat at the front.
2. 3 compartment sink had dirty dishes and no sanitizer was found prepared in the back
3. knife holders were found to have food debris on them (wall magnetic strip and silicon holder).
Corrective Action(s): 1. Must ensure wiping rags are kept in 200 ppm quat
2. Sanitizing sink needs to be kept clear of dirty dishes and food debris. It is for sanitizing dishes only.
3. Ensure knives are properly washed and sanitized before putting away on magnetic strip or silicon holder.
