Observation (CORRECTED DURING INSPECTION): Observed food in the prep line cooler measuring at an internal temp. of 6C, operator states food has been stored in cooler for 4 hours or more.
Health Rationale:
Potentially hazardous food stored above 4C increases the risk of pathogen growth and/or toxin production, leasing to potential foodborne illness.
Corrective Action:
The District Environmental Health Officer was contacted, the issue was discussed with the operator and the food was voluntarily discarded at the time of inspection. Ensure potentially hazardous food is held at 4C or below.

Observation (CORRECTED DURING INSPECTION): Observed sanitizer pail measuring at 10ppm chlorine with a test strip (range: 100 - 200ppm).
Health Rationale:
Sanitizer at an incorrect concentration increases the risk of pathogen survival and subsequent growth and/or toxin production, leading to potential food contamination and potential foodborne illness.
Corrective Action:
Operator prepared a new solution of sanitizer at the time of inspection. New solution was measured at 200ppm chlorine using test strips. Ensure equipment and food contact surfaces are cleaned and sanitized at the correct concentration.

Observation (CORRECTED DURING INSPECTION): Observed a dolly blocking access to the handsink at the time of inspection.
Health Rationale:
Inaccessible handsinks increase the risk of staff not washing their hands, leading to potential cross-contamination and potential foodborne illness.
Corrective Action:
Staff removed the dolly at the time of inspection. Ensure handsinks are always supplied with hot/cold running water, liquid soap and paper towels and ensure they are always accessible to staff.

Observation (CORRECTED DURING INSPECTION): Observed the back door of the facility leading outside propped open at the time of inspection.
Health Rationale:
An open back door increases the risk of providing entry to pests, such as rodents. This may lead to potential contamination of food and subsequent potential foodborne illness.
Corrective Action:
Operator closed the door at the time of inspection. Ensure the door remains closed when not in use to decrease the risk of pests entering the facility.

Observation: Observed the following not in good working order:
1. Observed the paper towel dispenser at the handsink not functioning correctly, staff placed a roll of paper towels near the handsink prior to inspection.
2. Observed one prep line undercounter cooler measuring at an ambient temperature of 6C, correct by 2023/05/23.
Health Rationale:
1. A paper towel dispenser not in good working order increases the risk of staff not washing their hands properly, increasing the risk of potential cross-contamination and potential foodborne illness.
2. A cooler not functioning correctly increases the risk of potentially hazardous food stored above 4C, increasing the risk of potential foodborne illness.
Corrective Action:
1. Ensure the paper towel dispenser is serviced, correct by next routine inspection.
2. Ensure the cooler is serviced such that it can maintain food at a temperature of 4C or below, do not store any potentially hazardous food in the cooler until it has been verified by the District Environmental Health Officer.
